I've only seen a handful of episodes, but I believe the premise was that he would work with whatever was provided to him & the environment allowed. In one instance, he was working in a pioneer kitchen with only "18th century tools", but that was just the once. Other episodes I caught included scenarios like coooking for a cattle drive on the open prairie, a carribean feast on a small deserted island, a dining car aboard a train, as well as various hotels & banquet halls. Just sayin'.
